For five generations, Beacon Hill Ranch has been home to cattle that our family has raised with an eye towards producing great beef while respecting the land, the cattle and those who consume our beef. Today the tradition continues incorporating current science, Hereford and Angus genetics and good animal husbandry. All designed to produce old-fashioned quality and flavor from beef that is bred to be leaner than in years past yet still full of flavor, tenderness and important nutrients.

Gourmet meals or burgers on the grill, whichever your choice the meal will be great when made with custom fed beef from Beacon Hill Ranch. Utilizing an optimal combination of progressive genetics, thoughtful feeding, and old-fashioned dry aging & processing, our beef brings customers back to us time and again. While today’s supermarket beef supply only takes a few days to transition from beef “on the hoof” to beef “on the table”, BHRBeef is the delicious product of time and nature. Supermarket beef makes economic sense for retailers, but frequently yields beef that is less than you’d like it to be, often less tender and missing the rich flavor of carefully fed and dry-aged beef.

BHR Beef is carefully bred, custom fed and dry-aged for ~21 days to maximize its intense flavor and tender texture. We feed our best steers to just the right weight and finish, ensuring tender, marbled beef that is full of flavor yet not fatty. You can be confident of the careful choices made in the production of BHR Beef.

1. Quantity


Regardless of your family’s dining habits we have an option that will afford you the opportunity to buy great quality beef in quantity. You’ll save in the long run while enjoying delicious gourmet beef from a local source you’ll know and trust. You can even make an appointment to stop by the ranch and see the way we raise your BHRBeef.
Whole Steer: A whole steer usually yields 800-900 pounds of beef. This “hanging weight” is taken before dry-aging and will decrease somewhat in the aging process as moisture evaporates from the beef. Dry-aging utilizes the evaporative process to intensify flavor while natural enzymes in the beef create a change which tenderizes the meat. Dry-aging of ~21 days makes a tremendous difference and is something like the process of aging fine wine or whiskey…..nature does the work man-made procedures cannot.
Side of Beef: One-half of a steer is called a side because you get either the right or left side and thus get a selection that includes some of every cut available on the steer. A side of beef is usually 400-450 pounds hanging weight.
Split-Side of Beef: A split-side of beef is equal to one-quarter of a steer. Either the right or left side is halved along the lengthwise axis to deliver a selection that includes some of nearly every cut available on the steer. A split side of beef is usually 200-225 pounds hanging weight.

A family of 4 who eats beef 2-3 nights per week will consume a side of beef in ~9 months

2. Packaging
We recommend vacuum packaging in a heavy plastic, freezer safe package. Better storage, less mess when thawing and clear wrapping for viewing your meats. When arranging your processing with Walke Brothers Custom Meats ask for this method. They’ll be able to quote the current charge for processing and vacuum packing. Currently (Nov 2006) this charge is 57¢ per pound based on hanging weight.

3. Storage
Your beef will be flash frozen immediately after processing. We recommend that you store it in your freezer for no longer than 1 year. Careful selection of the quantity to be purchased will ensure your beef is consumed while in optimal condition. Space note: A whole steer will fill a 16 cu foot chest freezer.  

4. Pricing
Our prices reflect the quality we breed into every steer we feed, the care we take in developing and delivering a delicious and wholesome product to your table and the extra time involved in natural processes not commonly available in supermarket beef.

Our beef prices fluctuate with the market and are based upon volume purchases of whole, side or split-side quantities.
